Steak Tartare hors d’oeuvres
Ingredients:
  • 8 oz perfectly cleaned tenderloin
  • 1 t capers
  • ½ t Worcestershire
  • ½ t mustard
  • ½ med onion minced
  • 1 egg yolk
  • ½ t kosher salt (or to taste)
  • 1 T parmesan cheese
  • ½ t chopped parsley
Mince the meat preferably with a sharp knife or in a food processor. Blend all the other ingredients together then add the meat and mix well. Serve immediately on crisped foccacia crouton. Garnish with a piece of shaved reggiano.
